Pesto Pizza From Scratch│Cooking with Ashley │Ashley Tervort

 Hey Huns,

In this "Cooking with Ashley" I show you how to make my pesto pizza from scratch! I absolutely love making this pizza because of easy, customizable, & fun it is. Feel free to top it with whatever veggies you have laying around in the fridge and get creative with it. ☺️ This pizza is great as an appetizer, snack, served at brunch, or pretty much however you like it! Oh, and guess what? You wouldn't even know its vegan... 😉 │Pesto Sauce│ 1/2 cup soaked cashews (30 minutes in warm water, or overnight in. room temperature) 1 1/2 to 2 tbs nutritional yeast 2 large garlic cloves 3 tsp fresh lemon juice 2 tbs pine nuts 2 tbs olive oil salt & pepper to liking 3/4 cup tightly packed fresh basil 1 cup loosely packed greens (spinach preferred) 1/4 cup vegan parmesan *optional* 1. In a blender or food processor, combine soaked & drained cashews, garlic cloves, and pine nuts. Blend until minced or to a "rice like" texture. 2. Add in nutritional yeast, lemon juice, vegan parmesan *optional*, olive oil and blend until smooth. 3. Finally, add in basil, loose greens, salt & pepper to liking, and blend until smooth. Scrape down sides often to ensure everything is well blended and smooth with no chunks. If wanted to be a thinner sauce, add in 1-3 tbs water as needed.
